The origin of Betanzos’ iconic omelette is uncertain, but it is traditionally attributed to Angelita, cook at La Casilla, who began serving it undercooked in 1910. Made with just potatoes, eggs, olive oil and salt, it attracts visitors from far and wide and is celebrated each October during Omelette Week.
